ON THE TABLE

Appleby’s Cheshire. British cheese today. Direct from Paxton & Whitfield in London. The colour of the paste is fine and light yellow due to the addition of moderate amounts of annatto. Not as crumbly as territorials usually are. Flavour is long, slightly earthy, hints of sharpness and a fine acidity. A lovely cheese.

To pair with: A good single malt whisky without any smoke flavours. Add a few drops of water. Nothing else. Enjoy.
