Bloomy rind from raw, organic cow’s milk. farm dairy and milk from own herd. Very white rind and light yellow paste underneath. Very mild flavour, a cheese anybody can like.
To drink: A light and fruity red.

HITRA GÅRDSMAT – HITRA

Kristines myke

Bloomy rind, camembert style, but smaller. Soft yellowish paste. Raw milk from own herd. balanced taste that will show some more sting if you leave it for a while.
To drink: An uncomplicated champagne. A light red à la Beaujolais. Even a plain white Burgundy.

TJAMSLAND YSTERI – BIRKELAND

Rosalita

An organic, lactic cheese from raw cow’s milk. Not more than milk and acidity as very young, but after a couple of weeks it gives a lot more. Worth waiting those few days.
To drink: Fresh white. Even a cup of good tea.
