Cream cheese

This is agroup of really fresh cheese, many of which are not matured at all. Others may get a week. The traditional industrial cream cheeses belong to this group, as well as cottage cheese, but so do some of the freshest chèvres as well, and Mozzarella. This is a group of cheeses that is referred to as lactic.

Shelf life is very short (apart from the industrial cream cheeses). They have no rind and is meant for immediate consumption. Maturing such cheeses will probably do nothing but harm.
