Radio Metro Matvrak – Ost med Jan Peter

ON THE TABLE

Pecorino Siciliano DOP. A rare cheese I brought home from Cheese 2019 in Bra Piedmont in September. Made from raw ewe’s milk at small farms and artisan dairies. Only local sheep breed is allowed. Is made along long lasting traditional methods with use og wooden equipment, including the cheese making vat.

A pungent cheese, very savoury with a fair amount of salt. Flavour is voluminous with farmyard tones and hints of wool.

A fantastic cheese with complex flavours and quite another league compared to pasteurised varieties.

Total annual production is 4o tonnes. Matured for a minimum of four months, but often longer like my cheese.
